This is the perfect pie crust.Over the years I have tried other recipes that cut down on the shortening but haven't been this light and flaky. Since shortening is a hydrogenated, “fake” fat, I haven’t had it in my home for years. The methodology of a good pie crust is very similar to that of a good biscuit (they are both “pastries”, after all).
